Seasonal Cooking Begins With the Place You Are In
A seasonal menu is more useful when it names a place. An ingredient that is being harvested in one region may be out of season in another, while protected growing can extend the period in which a crop is available. The Royal Horticultural Society's growing advice explicitly connects plant choices with climate and describes how greenhouses can extend seasons.
For a cook, that makes a seasonal chart a prompt for questions rather than a universal shopping instruction. Where was this grown? Is it a recent harvest, a stored crop or produce from a protected environment? None of those answers automatically determines whether it belongs in dinner.
Start with one ingredient
Choose the item that looks most promising, then build the meal around it. This reverses the usual process of selecting a fixed recipe and searching for every component regardless of what is available.
A useful recipe offers a structure: a main ingredient, a cooking method and supporting flavours. Keep that structure visible when adapting it. Swapping one vegetable for another may also require changing the cut, cooking time or amount of liquid.
Ask a better market question
Instead of asking only what is “best”, ask the grower or seller what has arrived recently and how they like to use it. Request a name for the variety when one is available. These details can help you remember a successful purchase and recognise a difference next time.
Taste and condition still matter. A seasonal label is not a guarantee that every individual piece of produce will meet your expectations.
Make a local notebook
Record a few ingredients you enjoyed, the month and the place where you found them. Over time, that becomes a personal cooking calendar tied to actual experience rather than a generic illustration.
Leave room for convenience and changing circumstances. Seasonal cooking need not become a purity test or a promise of automatic environmental superiority. Its practical value is attention: noticing what is available, learning where it comes from and allowing the meal to change in response.
